Goat cheese carrot tart with orange sauce

- 2 carrots
- Salt
- juice of 1 lemon
- 250 g goat cheese
- 250 g double cream cheese
- 100 g yogurt
- 4 tsp gelatin
- black pepper freshly ground
- 2 oranges
- 1 tsp Cornstarch
- 2 tbsp grappa

Peel the carrots and slice them lengthwise into thin strips with a vegetable peeler. Boil in lightly salted water with lemon juice for 2-3 minutes. Drain, let cool. Mix goat cheese, double cream cheese, yogurt, and instant gelatin until smooth. Season with salt and pepper. Line a small springform or baking dish (18 cm diameter) with cling film. Layer the cheese mixture with some carrot slices. Chill in the refrigerator for 2–3 hours.

Rinse an unpeeled orange and zest it with a zester. Juice both oranges, then simmer the juice and zest strips. Whisk cornstarch with grappa and add to the orange juice to thicken. Slice the tart into portions and serve with carrot slices and orange sauce.
