Goat Cheese Bites with Balsamic Onions

Ingredients

  • 2 red onions
  • 2 tbsp butter
  • 1 tbsp sugar
  • 1 tbsp dark balsamic vinegar
  • 3 tbsp dry red wine
  • Salt
  • pepper (ground)
  • 100 g goat cheese (roll)
  • 1 Tbsp clarified butter
  • 4 sheets puff pastry (frozen)
  • 1 Egg white
  • 0.5 bunch arugula
  • 50 g chopped walnuts

Instructions

    Preheat the oven to 200°C fan. Peel, halve and slice the onions lengthwise into thin strips. Caramelize the butter and sugar in a pot, add the onions and stir for a few minutes. Deglaze with red wine and vinegar, season with salt and pepper, and simmer on medium heat for 6-10 minutes. Slice the goat cheese into 1.5 cm thick rounds and sear both sides in clarified butter until golden.

    For the puff pastry cups, thaw the pastry and roll each sheet lightly with flour. Cut squares of 10x10 cm and cut strips from the leftover dough for the edges. Brush the strips with egg white and attach them to the base edges. Bake in the preheated oven for 15-20 minutes until golden brown. Fill the cups with caramelized onions, top with a goat cheese round, and garnish with arugula and walnuts before serving.
