Gluten-free gingerbread by Nathalie Gleitman is quick to make and perfect for clean eating. At Spoonsparrow there is the festive recipe.
Ingredients
- 180 g ground hazelnuts
- 25 g coconut oil
- 1 heaping tbsp apple sauce
- 55 g maple syrup
- 50 g dried apricots
- 1 tsp gingerbread spice mix
- 50 g dark chocolate
- 1 tsp coconut oil
Instructions

Combine all dough ingredients in a blender and process into a coarse dough. Shape the dough into rounds and place on parchment paper.

Melt the chocolate with 1 tsp coconut oil in a double boiler, then spread it over the cookies. Store gluten‑free gingerbread in the refrigerator.
