Gluten-Free Florentiner
Gluten-free Florentiner: The holiday cookies are super crispy and easy to make! The recipe comes from Spoonsparrow.
Ingredients
- 1 Vanilla bean
- 30 g candied lemon peel
- 30 g candied orange peel
- 3 tbsp Raisins
- 100 g raw cane sugar
- 30 g Butter
- 2 tbsp honey
- 125 g whipping cream (use lactose-free if needed)
- 60 g chopped almonds
- 60 g almond slivers
- 150 g dark chocolate
- 1 tsp vegetable oil

Split the vanilla bean lengthwise and scrape out the seeds with a knife. Finely chop the candied lemon peel, orange peel, and raisins.

Combine the vanilla seeds with sugar, vanilla sugar, butter, honey, and whipping cream in a small saucepan. Stir until it boils; everything should dissolve well and caramelize lightly. Fold in the candied fruits, raisins, and almonds, then remove from heat.

Using two spoons, place dollops spaced apart on a parchment-lined baking sheet. Bake in a preheated oven at 180 °C (160 °C fan, gas: level 2–3) for 10–12 minutes until golden brown. Remove the gluten-free Florentiner and cool on a wire rack.

For decoration, chop chocolate and melt it over a double boiler, then stir in oil. Brush or spoon the liquid glaze onto the smooth underside of each cookie and let set.
