Hazelnut Florentine

A delightful holiday treat from Spoonsparrow: honey, hazelnuts and dark chocolate combine into a delicious festive confection!

Ingredients

  • 100 g dried fruit (e.g., raisins, cranberries, cherries)
  • 150 g whipping cream
  • 40 g Butter
  • 100 g cane sugar
  • 1 Tbsp vanilla sugar
  • 50 g honey
  • 2 tbsp flour
  • 50 g chopped almonds
  • 50 g hazelnuts
  • 50 g cornflakes
  • 50 g almond flakes
  • 100 g dark chocolate couverture

Instructions

    Chop the dried fruit finely. Bring the whipping cream with butter, sugar, vanilla sugar and honey to a quick boil while stirring. Mix in the flour, chopped almonds, hazelnuts, cornflakes and almond flakes. Add the dried fruit and let it simmer briefly again. Remove from heat.

    Let the mixture cool slightly. With two teaspoons, form small dough balls spaced about 5 cm apart on a baking sheet lined with parchment paper. Press them lightly flat and bake in a preheated oven at 200 °C (180 °C fan‑forced, gas: level 3) for 10–12 minutes until golden yellow.

    Remove the hazelnut Florentines from the oven, immediately lift them carefully off the paper with a spatula and place them upside down (bottom up) on a cooling rack. Let cool completely.

    Melt the chocolate couverture over a double boiler or in short bursts in the microwave. Brush the underside of each Florentine with the melted chocolate and allow to set fully.
