Glazed Profiteroles

- 120 g powdered sugar
- 1 tsp lemon juice
- 60 g dark chocolate couverture
- white chocolate sprinkles
- 1 tsp Baking powder
- 4 eggs

For the profiteroles, pour 250 ml water into a pot and bring to a quick boil with salt and butter. Mix flour, starch, and baking powder together and pour in one go while stirring constantly. Cook the dough over medium heat until it forms a large ball; keep stirring and turning until a white film appears on the bottom of the pot. Transfer the dough to a bowl and let cool for about 5 minutes. Add the eggs one at a time, beating well with an electric hand mixer’s kneading hooks.

Preheat the oven to 200 °C (Oven + fan) and line a baking sheet with parchment paper.

Scoop the dough into a piping bag fitted with a large round tip and drop walnut‑sized dollops onto the prepared sheet.

Bake in the preheated oven for 15–20 minutes, then remove and let cool.

For decoration, whisk powdered sugar with lemon juice to make a glaze. Brush the profiteroles with the glaze and allow to dry. Melt chocolate and let it cool slightly; drizzle over the balls, sprinkle with sprinkles, and let set.
