Ingredients
- 500 g sugar
- 250 ml Water
- 1 kg large white wine grapes

Wash the grapes and let them drain well. Separate each grape, or cut it off, leaving a small stem attached. Gently pat dry with kitchen paper. Lay two sheets of parchment paper on the work surface.

Cook the sugar with the water to a temperature of 153-155°C (using a candy thermometer). If no thermometer is available, pour some syrup into ice water; it should solidify immediately and break like glass.

Remove the pot from the heat. Take each grape by its stem and briefly dip it only halfway into the syrup. Place upright on the parchment paper and let dry.
