Caramel Candies

Ingredients

  • 200 g sugar
  • 150 g honey
  • 1 organic orange (zest)
  • 250 ml heavy cream (at least 30% fat content)
  • 50 g butter

Instructions

    Add the sugar, honey and 5 tablespoons of water to a pot and simmer for 2-3 minutes. Add the orange zest. Pour the cream into a large pot and bring to a boil. Pour the caramelized sugar into it and cook while stirring for about 10 minutes.

    Test the mixture by dropping a few drops onto a cool plate or marble board; if it sets evenly, it’s ready. Stir in the butter. Line a rectangular candy mold (about 20x30 cm) with aluminum foil, oil it, pour in the mixture and let it cool.

    Once cooled, pour the mixture onto a large board and remove the foil. Cut into candies with an oiled knife. Allow the caramel candies to cool completely.
