- 1.2 kg small beetroot
- 3 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 3 tbsp sugar
- 2 tsp chopped ginger
- 2 tbsp chopped walnuts

Wash, trim, and cook beetroot with skins in salted water for about 35 minutes; then drain, rinse, let cool, peel. Slice into thin rounds.

Heat oil in a wide pan and sauté beetroot with ginger for several minutes while stirring. Sprinkle sugar, allow to caramelize, season with salt and pepper, and serve sprinkled with walnuts.
