Ingredients
- 500 g Sweet potatoes
- 200 g carrots
- 2 shallots
- 2 Garlic cloves
- 20 g ginger (1 piece)
- 2 tbsp olive oil
- 900 ml vegetable broth
- Salt
- black pepper (ground)
- 2 tsp Curry powder
- 1 tsp turmeric
- 100 g crème fraîche

Peel and wash the sweet potatoes and carrots, then cut them into small cubes. Peel the shallots and garlic cloves and finely chop them. Peel the ginger and grate it finely.

Heat the olive oil in a pot over medium heat. Add the shallots and garlic and sauté for 2 minutes. Add the sweet potato and carrot cubes along with the grated ginger, cooking briefly to combine flavors. Pour in the vegetable broth and bring to a gentle simmer at medium heat for 20–25 minutes.

Season the soup with salt, black pepper, curry powder, and turmeric. Use an immersion blender to puree until smooth. Stir in the crème fraîche, then serve the soup warm.
