Sweet Potato Soup with Red Quinoa
A perfect fitness recipe – quick to make, healthy and made with fresh ingredients.
Ingredients
- 100 g red quinoa
- Salt
- 400 g sweet potatoes
- 1 onion
- 2 Garlic cloves
- 1 red chili pepper
- 3 tbsp olive oil
- 2 tsp ground coriander
- 2 tsp ground cumin
- 1 tsp ground fenugreek
- 1 tsp turmeric
- 600 ml Vegetable Broth
- 200 ml coconut milk
- Pepper
- 1 tbsp Lemon Juice
- 2 sprigs cilantro
Instructions

Rinse quinoa under warm water until clear, then simmer in 300 ml boiling water covered over low heat for about 12 minutes. Remove from heat and let stand for about 5 minutes to drain. Season with salt.

Meanwhile peel and dice sweet potatoes. Peel and chop onion and garlic. Wash, deseed, and chop chili pepper.

Heat olive oil in a pot. Sauté onion, garlic and chili over medium heat until translucent. Add sweet potatoes, sprinkle spices, and pour in broth. Cover and simmer over low heat for about 15 minutes.

Puree soup finely, stir in coconut milk and bring back to a boil. Season with salt, pepper and lemon juice. Wash cilantro, shake dry and pluck leaves.

Serve soup in four bowls, top with quinoa and garnish with cilantro.
