Ingredients
- 1 pineapple
- 2 pears
- 50 ml lemon juice
- 500 g raw cane sugar (gelatinizer 2:1)
- 5 g Ginger
- 1 vanilla pod

Peel the pineapple, quarter it, remove the core and dice the flesh. Peel the pears, quarter them, cut out the core and dice the quarters as well. Drizzle with lemon juice and mix with the pineapple.

Weigh the prepared fruit and combine with half the amount of gelatinizer in a pot (1 kg fruit to 500 g sugar). Peel and grate the ginger finely into the mixture. Split the vanilla pod and add it to the fruit. Let steep for about 15 minutes.

Bring the fruit to a boil and simmer while stirring, bubbling for about 4 minutes (gel test). Remove the vanilla pod, fill the preserve into prepared jars and seal immediately. Allow to cool.
