  • 10 g ginger
  • 200 ml apple juice
  • 2 frozen bananas
  • 200 ml Milk (3.5% fat)
  • 6 dates
  • 0.5 Vanilla pod
  • 50 g lingonberries (drained weight, jar, no added sugar)

    Peel the pears for the ginger pear dish. Peel and grate the ginger, then warm it with apple juice in a pot. Add the pears and let them steep at low heat for about 30 minutes. Let the pears cool in the ginger broth until ready to serve, keeping them submerged. Meanwhile, blend the frozen bananas, milk, and dates in a stand mixer until smooth. Scrape out the vanilla bean pulp and add it. Fold the drained lingonberries into the ice cream mixture. When serving, drain the pear, cut it crosswise once, and arrange it with the ice cream in four bowls.
