Ingredients

  • 150 g flour
  • 100 g butter
  • 50 g sugar
  • 1 egg
  • 1 pinch salt
  • 2 tart apples
  • 2 pears
  • 0.5 lemon (juice)
  • 250 ml Whipping Cream
  • 2 egg yolks
  • 2 tbsp lavender honey
  • powdered sugar
  • flour (for dusting)
  • lavender flowers (for garnish)

Instructions

    Preheat the oven to 200 °C with upper and lower heat.

    Knead a shortcrust pastry from flour, butter, sugar, egg and salt. Wrap in cling film and chill for 30 minutes.

    Roll out on a floured surface and line a tart pan with it.

    Wash, peel, halve, core and slice the apples and pears into wedges. Drizzle with lemon juice. Arrange fan‑shaped on the pastry base and bake in the preheated oven (middle rack) for about 20 minutes.

    Whisk together the cream, egg yolks and honey. Briefly open the oven and pour the cream glaze over the fruit. Close the oven again and bake the tart another 20–25 minutes until golden brown. Let the cake cool slightly, dust with powdered sugar and garnish with lavender flowers before serving warm or cold.
