Ingredients
- 175 g butter
- 175 g powdered sugar
- 1 pinch salt
- 3 eggs
- 175 g flour
- 1 tsp Baking powder
- 75 g ground almonds
- 3 tsp ginger powder
- 1 tbsp candied ginger
- 200 g powdered sugar
- 1 tbsp Lemon Juice
- raspberry syrup
- colored sugar pearls

Preheat the oven to 180°C fan.

Beat butter with powdered sugar and salt until creamy. Add eggs one at a time, then fold in flour, baking powder, almonds, ginger powder and finely chopped candied ginger. Fill a piping bag fitted with a smooth medium tip and pipe 2–3 cm dots onto parchment-lined tray. Bake in preheated oven for 10–15 minutes, remove, carefully lift from tray and cool.

For decoration whisk powdered sugar with lemon juice into a thick glaze, tint pink with raspberry syrup if desired. Brush the cookies and sprinkle with colored sugar pearls. Let set.
