Gezuckerte Doughnuts

Ingredients

  • 400 g flour
  • 2 EL sugar
  • 1 TL salt
  • 0.5 pack dry yeast
  • 50 g softened butter
  • 250 ml lukewarm milk
  • 3 egg yolks
  • flour (for working)
  • vegetable oil (for frying)
  • sugar (for rolling)

Instructions

    For the dough mix 350 g flour with sugar, salt and yeast in a bowl. Add the butter with the milk. Add the egg yolks and stir everything with the hand mixer attachments at low speed for 2-3 minutes. Then add the remaining flour and knead by hand until smooth and elastic. If needed add more flour or milk. Cover with a cloth and let rest about 15 minutes.

    Afterwards roll out the dough on a floured surface to about 1.5 cm thickness. Cut circles about 7 cm in diameter and punch a hole of about 2 cm in each center. Place all shaped doughnuts on a floured surface, cover with a cloth and let rest for about 1 hour.

    Heat oil in a deep fryer to about 170°C. Fry the doughnuts in batches for 2-3 minutes, turning once. Drain on a rack and while warm roll in sugar.
