Austrian Steamed Dumplings

- 500 g wheat flour
- 30 g yeast
- milk
- 50 g butter
- 2 Eggs
- 2 tbsp sugar
- 1 pinch salt
- 1 cup milk
- 2 tbsp butter
- vanilla sugar
- butter (for brushing)
- sugar (for sprinkling)
- Cinnamon
- plenty of chopped walnuts
Instructions

Combine 500 g wheat flour with yeast dissolved in lukewarm milk, melted butter, two fresh eggs, two tablespoons sugar, a pinch of salt, and one cup of lukewarm milk into a bowl.

Beat the dough with a wooden spoon until it starts to bubble. Cover and let rise in a warm place for about two hours.

Shape the dough into large pieces and allow them to rise again while kept warm.

In a wide-bottomed pot melt two tablespoons butter, add the cup of vanilla-sweetened milk, bring to a boil. Place the dough pieces spaced apart in the pot, cover with a lid, and steam over medium heat for about 15–20 minutes until you hear a crackling sound.

Arrange the steamed dumplings on a hot plate with the browned side up, drizzle with melted butter, and sprinkle with sugar and cinnamon. Serve with plum compote flavored with cinnamon sugar and plenty of fresh chopped walnuts.
