Garlic Spaghettini

Ingredients

  • 400 g spaghettini
  • 4 tbsp olive oil
  • 6 cloves garlic
  • 1 pepperoncino
  • 0.5 bunch Parsley
  • Salt
  • Pepper
  • 40 g parmesan (whole)

Instructions

    Bring a large pot of salted water to a boil for the pasta.

    Peel the garlic and slice thinly; crush the pepperoncini.

  3. 3.

    Heat the olive oil in a pan, add garlic and pepperoncini, and sauté lightly so the garlic does not become bitter.

    Remove the pan from heat.

    Add the spaghettini to the boiling water and cook according to package instructions until al dente.

    Wash and dry the parsley, remove leaves and chop finely.

  7. 7.

    Just before the pasta is done, reheat the pan, add 3-4 tbsp of pasta water and stir.

    Drain the pasta into a colander, then transfer it to the pan, season with salt and pepper.

    Sprinkle the chopped parsley over the pasta and mix well.

    Serve on warmed plates, grate parmesan on top, and serve immediately.
