Pasta with Salsiccia and Cherry Tomatoes

Ingredients
- 1 onion
- 2 Garlic cloves
- 500 g salsiccia
- 2 EL olive oil
- 1 EL tomato paste
- Noilly Prat
- 400 g peeled tomatoes (canned)
- 1 sprig rosemary
- 1 sprig thyme
- 2 sage leaves
- 4 basil leaves
- 150 g cherry tomatoes
- Salt
- pepper (ground)
- 1 pinch sugar
- basil for garnish
- 40 g grated Parmesan

Peel and finely chop the onion and garlic.

Press the sausage mixture into even portions from the casing and shape into balls with damp hands.

Heat oil in a large pan and brown the sausage balls around. Remove them. Then sauté onion and garlic until translucent. Stir in tomato paste, deglaze with a splash of Noilly Prat, reduce, and pour in canned tomatoes. Wash, dry, and finely chop the herbs; mix into the sauce and simmer for about 15 minutes. Rinse and halve the fresh cherry tomatoes. Add them and the sausage balls to the sauce and warm for another 10 minutes. Season with salt, pepper, and sugar.

Cook pasta in plenty of boiling salted water until al dente. Extend the tomato sauce with a bit of pasta cooking water if needed. Drain the pasta well and plate it. Pour the sauce over the noodles, garnish with basil, and sprinkle grated parmesan before serving.
