Garlic Shrimp

Ingredients

  • 24 large shrimp
  • 6 cloves garlic
  • 1 bunch parsley
  • 2 lemons
  • 2 kg coarse sea salt

Instructions

    Remove heads from the shrimp, peel, devein (carefully slit along the back with a knife and remove the black vein) and rinse under cold water; pat dry. Preheat oven to 250°C.

    Peel and roughly chop the garlic. Wash the parsley, shake dry, roughly chop and crush it with the garlic in a mortar. Combine shrimp with the parsley-garlic mixture in a bowl and mix well. Rinse lemons hot, dry rub them, and cut into 24 thin slices. Sprinkle 1 kg of salt on a baking sheet, arrange lemon slices on top, placing one shrimp on each slice. Cover everything with remaining salt and bake in the oven at 220°C fan-forced for about 20 minutes.

    Remove from oven, break shrimp out of the salt crust and serve on small pre-warmed plates with white bread.
