Baked Chicken with Mashed Potatoes and Green Bean Medley

Ingredients

  • 1 chicken
  • 4 stale rolls
  • 2 Eggs
  • 80 g flour
  • paprika powder (sweet)
  • 2 l oil for frying
  • 1 kg waxy potatoes
  • 40 g Butter
  • 150 g whipping cream
  • Salt
  • pepper (nutmeg)
  • 500 g green beans

Instructions

    Peel, wash and boil the potatoes for 25 minutes; drain. Add butter and cream, season with salt, pepper and nutmeg, then mash into a smooth purée using a potato masher.

    Wash the beans, trim ends, and cook in heavily salted boiling water for about 8 minutes; drain.

    Rinse the chicken, pat dry, cut into eight pieces, and remove skin. Whisk eggs, salt, pepper and paprika together. Grate the rolls finely. Spread eggs, flour and grated rolls on separate plates. Coat each chicken piece first in flour, then in egg mixture, and finally in the roll crumbs. Fry portions in hot oil for about 12–15 minutes until golden; drain on paper towels.
