Funny Yeast Dough Man

Ingredients
- 1 cube fresh yeast
- 150 g sugar
- 500 g flour
- 1 tsp unprocessed lemon zest
- 1 tsp unprocessed orange zest
- 100 g Soft Butter
- 1 egg yolk
- 200 ml lukewarm milk
- 2 ripe apples (Boskop)
- 1 tbsp Lemon Juice
- milk (for brushing)
Instructions

Crush the yeast and stir it with 3 tbsp sugar in a cup until smooth and liquid.

Mix the flour with the remaining sugar, lemon and orange zest, put into a bowl and make a well in the center. Pour the yeast in, dust with flour, cover and let rise in a warm place for 15 minutes.

Add the butter and egg yolk, then knead with milk into a smooth dough. Shape into a ball, cover and let rise in a warm place for 1 hour until doubled in volume.

Preheat the oven to 160°C fan (325°F). Line baking trays with parchment paper.

Peel, quarter, core, finely grate the apples and immediately drizzle with lemon juice. Knead the dough again, fold in the apple strips. Divide the dough into 2–3 pieces and shape each into a man figure as desired.

Place the figures on the trays with space between them, brush with milk and let rise for another 15 minutes.

Bake in the preheated oven for 25–35 minutes (depending on size and thickness). The men are done when they sound hollow when tapped on the bottom and feel firm but not hard.

Remove from the oven and cool on a wire rack.
