Princess Cake Pops
Fairytale lovers beware: the Princess Cake Pops from Spoonsparrow enchant both young and old.
Ingredients
- 125 g butter
- 180 g sugar
- 1 packet vanilla sugar
- 4 eggs
- 125 ml milk
- 250 g flour
- 0.5 packet Baking powder
- fat (for the pan)
- 100 g cream cheese (plain)
- 20 g butter
- 50 g powdered sugar
- 4 tbsp Lemon juice
- decorative sugar (heart-shaped, star-shaped, pink sugar)

Preheat the oven to 180°C (350°F) with fan or conventional heat. Beat the butter with the sugar and vanilla sugar until light and creamy. Add the eggs one at a time, mixing well after each addition, then pour in the milk and stir. Combine the flour and baking powder, sift over the batter, and whisk thoroughly with a whisk to incorporate. Pour the batter into a greased loaf pan and bake for 35-40 minutes until golden. Remove, let cool briefly, turn out onto a wire rack, and allow to cool completely.

Crush the cooled cake into crumbs in a bowl. Beat the cream cheese with butter and powdered sugar until fluffy, then fold in the cake crumbs. Shape the mixture into small balls (about 2 cm diameter) and chill for at least one hour. Thread each ball onto a stick, dip briefly in lemon juice, and roll in decorative sugar.
