Fruity-Spicy Barley Salad

Ingredients
- 300 g barley
- 1 onion
- 100 g olives
- 2 tbsp capers
- 2 Blood oranges
- 3 tbsp white wine vinegar
- 6 tbsp Olive oil
- Salt
- black pepper (freshly ground)

Rinse the barley thoroughly under running water, then bring 750 ml of water to a boil and simmer covered over low heat for 25 minutes. Drain and let cool.

Peel and dice the onion. Remove the flesh from the olives. From one half orange, peel off the zest with a zester. Thoroughly peel the oranges with a sharp knife, removing all white membranes, then cut the segments out along the separations. Catch the juice that drips and squeeze the remaining pulp by hand.

Whisk together the orange juice, vinegar, oil, salt, and pepper.

Combine the barley with onion, olives, capers, orange segments, and the dressing; sprinkle with orange zest before serving.
