Fruitful Wheat Salad with Cabbage

Ingredients
- 300 g tender wheat
- Salt
- 60 g pine nuts
- 450 g Brussels Sprouts
- 2 oranges
- 2 tbsp olive oil
- 2 tbsp walnut oil
- 4 tbsp vinegar
- Pepper (freshly ground)
- a pinch of ground cumin

Cook the tender wheat according to package instructions in plenty of salted water until al dente. Drain, rinse under cold water and let drain. Toast the pine nuts in a dry pan until golden brown. Trim the outer leaves from the Brussels sprouts, cut the stems crosswise and boil in salted water for about 8 minutes until firm. Cool in ice water and drain.

Peel the oranges, separate the segments and squeeze out any remaining juice. Whisk together the olive oil, walnut oil, vinegar, orange juice, salt, pepper and cumin to make a dressing. Gently combine all salad ingredients in a bowl and drizzle with the dressing. Let sit for about 10 minutes before serving on plates.
