Herring Salad with Red Beet

Ingredients

  • 375 g cooked beetroot roots (3 cooked beetroot roots)
  • 2 onions
  • 1 tart apple (e.g., Granny Smith)
  • 1 ripe pear
  • 300 g smoked herring fillets
  • 4 Tbsp sunflower oil
  • 2 tbsp Apple cider vinegar
  • Salt
  • Pepper
  • Chives

Instructions

  1. 1.

    Peel the beetroot roots and cut them into sticks. Peel the onions and finely chop them.

  2. 2.

    Wash the apple, quarter it, core it, and dice it. Peel the pear, core it, and cut it into pieces.

    Drain the smoked herring fillets well and cut them into bite-sized pieces.

    For the vinaigrette mix oil, apple cider vinegar, salt, and pepper. Combine beetroot, apple, pear, herring, and onions with the vinaigrette and let sit for 1 hour.

    Meanwhile wash the chives, shake dry, and cut into rings. Sprinkle the salad with chives.
