Fruitful Spinach Salad with Avocado and Lamb

Ingredients

  • 500 g fresh spinach
  • 2 ripe avocados
  • 2 Grapefruits
  • 2 Celery stalks
  • 400 g lamb meat (from leg or shoulder)
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp water
  • juice of one lemon
  • 5 tbsp olive oil
  • 3 tbsp sunflower oil
  • 1 Garlic clove

Instructions

    Clean the spinach, rinse thoroughly and drain. Slice the lamb into strips and sear in hot sunflower oil until browned on all sides. Season with salt and pepper. Peel the grapefruit and cut into segments. Use a sharp knife to remove the white membranes from the segments. Peel the avocados, halve them and cut into large wedges.

    Wash the celery stalks and slice into ribbons. Peel and crush the garlic clove. Whisk together olive oil, lemon juice, water, salt, pepper and garlic until a creamy sauce forms. Arrange spinach, avocado wedges, grapefruit segments, celery ribbons and lamb strips on four large plates and drizzle with the sauce.
