Spinach Salad with Mushrooms

Ingredients

  • 2 handfuls young spinach
  • 2 large mushrooms
  • 50 g Parmesan
  • 2 tbsp hazelnuts (chopped)
  • 1 tbsp chives
  • 2 tbsp white balsamic vinegar
  • 1 tbsp Lemon Juice
  • 2 tbsp nut oil
  • Salt
  • sugar

Instructions

  1. 1.

    Wash the spinach, discard any tough stems and drain well. Arrange on plates.

  2. 2.

    Clean the mushrooms and finely shave them. Shave the parmesan as well. Sprinkle both over the spinach leaves with the hazelnuts.

    For the dressing whisk together chives, oil, vinegar and lemon juice. Season with salt and a pinch of sugar.
