Ingredients
- 1 onion
- 1 Garlic clove
- 500 g starchy potatoes
- 200 g fresh spinach leaves
- 2 tbsp plant oil
- 900 ml vegetable broth
- Salt
- pepper (ground)
- 3 tbsp crème fraîche
- Nutmeg (freshly grated)
- 2 slices white bread
- 2 tbsp butter
Instructions

Peel and finely chop the onion and garlic. Peel, wash, and dice the potatoes into small cubes. Wash, rinse, trim, and dry the spinach.

Heat 2 tbsp oil in a pot and sauté the onion with the garlic. Add the potatoes, cook briefly, then pour in the broth.

Season with salt and pepper, bring to a gentle simmer for about 20 minutes. Add the spinach, simmer another 2-3 minutes, then puree the soup. Stir in the crème fraîche and season with nutmeg.
