This chickpea salad from Spoonsparrow tastes delicious and keeps you full for a long time.
Ingredients
- 400 g Chickpeas (canned, drained weight)
- 3 spring onions
- 250 g cocktail tomatoes
- 0.5 yellow bell pepper
- 80 g Sheep Cheese
- 10 g Parsley (1 bunch)
- 2 tbsp olive oil
- 0.5 lemon (juice)
- Chili
- Pepper
- Sweet Paprika Powder
- Salt

Place chickpeas in a medium bowl. Clean, wash, and dice the spring onions, tomatoes, and bell pepper. Cut the sheep cheese into small cubes. Wash parsley, remove the tough stems, and chop finely. Mix everything with the chickpeas.

Mix olive oil with lemon juice. Season with chili, pepper, paprika powder, and salt, and add to the salad. Let it sit for a while and adjust seasoning if necessary.
