Ingredients

  • 1 large ripe mango
  • 4 tbsp Lemon juice
  • 2 tbsp sugar
  • 0.5 tsp ground cinnamon
  • 0.25 tsp ground coriander
  • 100 g sugar
  • 150 g frozen raspberries
  • 2 tbsp lemon juice
  • 150 ml sparkling wine

    Peel the mango and cut it into slices, catching the juice. Add the fruit flesh to the juice and blend with 2 tbsp water and lemon juice, then strain through a sieve and stir in sugar, cinnamon, and coriander. Pour the mixture into a shallow metal bowl and freeze for about 3 hours, stirring frequently with a fork to prevent large crystals from forming.

    Simmer sugar with 100 ml water for about 15 minutes, then let cool. Thaw the raspberries, set aside some nice berries. Blend the remaining berries with lemon juice, strain through a fine sieve, and mix with sparkling wine and sugar syrup; pour everything into a shallow metal bowl. Freeze for at least 3 hours, stirring frequently to avoid large crystals.
