Fruitful Beet Salad

Even in winter you should indulge in plenty of vitamin-rich flavors – try the fruity beet salad from Spoonsparrow!

Ingredients

  • 400 g beets
  • Salt
  • 3 tbsp fruit vinegar
  • 6 tbsp walnut oil
  • 50 ml vegetable broth (instant)
  • 2 oranges
  • 200 g lamb's lettuce
  • 0.5 bulb fennel
  • pepper (ground)
  • 1 handful watercress

Instructions

    Wash, trim and cook the beets in plenty of salted water for about 45 minutes. Remove, cool briefly in cold water, then peel.

    Slice the beets. Add vinegar, oil, and broth to the beet slices. Season with salt and pepper.

    Using a sharp knife, thoroughly peel the oranges, removing the white pith, then separate the segments along the membranes.

    Wash, trim, rinse, and dry the lamb's lettuce by shaking it lightly.

    Wash, trim, and cut the fennel into strips.

  6. 6.

    Plate the fruity beet salad with lamb's lettuce. Garnish with orange segments, fennel, and watercress before serving.
