Fruit with Wheat Groats

Ingredients
- 200 g wheat groats
- 1 pinch salt
- 600 ml Milk
- 6 tbsp orange juice
- 2 dried apricots
- 250 g low-fat quark
- 2 tbsp sugar
- 2 tsp grated, untreated lemon zest
- 1 tbsp Lemon Juice
- 3 ripe peaches
- 1 untreated orange
- mint (for garnish)

Bring the wheat groats with the milk and a pinch of salt to a boil in a pot and let them swell for about 10 minutes over low heat, stirring occasionally. Transfer the cooked wheat to a bowl, mix in 2 tablespoons of orange juice, and allow it to cool. Finely chop the apricots and combine them with the quark. Add sugar, lemon zest, lemon juice, and the remaining orange juice, then stir well.

Parboil the peaches in boiling water, shock them in cold water, peel, halve, pit, and cut into small pieces. Thinly peel the untreated orange with a sharp knife, removing the white pith as well. Separate the fruit segments from the membranes and dice them. Gently mix the wheat groats with the quark cream, peaches, and orange cubes, cover, and refrigerate for 2 hours. Serve in bowls garnished with mint leaves.
