- 1 radicchio
- 1 head of endive salad
- 100 g pumpkin flesh
- 4 kiwis
- 2 tbsp pumpkin seeds
- 100 ml green tea
- 2 limes (juice)
- Salt
- pepper (ground)
- 2 tbsp olive oil

Wash, trim and tear radicchio and endive into bite‑sized pieces. Grate the pumpkin flesh finely. Peel the kiwis and slice them. Toast the pumpkin seeds in a dry pan until fragrant.

Whisk together green tea, lime juice, salt, pepper and olive oil; adjust seasoning to taste.

Arrange the prepared salad ingredients on plates. Drizzle the dressing over the salad and sprinkle with toasted pumpkin seeds before serving.
