Fruit Muffins with Crumble

Ingredients
- 350 g flour
- 120 g sugar
- 1 pinch salt
- 1 egg
- 230 g butter
- flour (for dusting the work surface)
- butter (for greasing the tins)
- 250 g mixed fruit (e.g., blueberries, strawberries, raspberries, apples, currants)
- 2 tbsp sugar
- 1 tbsp Lemon Juice

For the dough sift flour with sugar and a pinch of salt onto a work surface, create a well in the middle, crack the egg into it and scatter butter pieces around the well. Quickly knead by hand into a smooth dough, shape into a ball and wrap in cling film; refrigerate for 30 minutes.

Wash, peel, optionally cut the fruit small and mix with 2 tbsp sugar and 1 tbsp lemon juice.

Preheat the oven to 180 °C (350 °F) with fan or conventional heat.

Roll 2/3 of the dough thin on a floured surface, cut circles (~8 cm) and line greased tins (~5 cm diameter). Wrap fruit in the dough, rub remaining dough between palms and sprinkle as crumble over the fruit. Bake for about 25 minutes until golden brown.

Remove, cool, release from tins and let fully set.
