Pear-Plum Sheet Cake

- 400 g flour
- 42 g fresh yeast (1 cube)
- 150 ml lukewarm milk
- 5 tbsp sugar
- a pinch of salt
- 1 packet vanilla sugar
- 50 g liquid butter
- fat for the baking sheet
- 200 g butter
- 250 g flour
- 150 g sugar
- 750 g plums
- 750 g pears
- 3 tbsp Lemon juice
- 4 egg yolks
- 100 g sugar
- 250 g sour cream
- 150 g coconut flakes

Whisk yeast into milk until smooth. In a bowl combine flour, sugar, salt, vanilla sugar and butter; pour in the yeast mixture and knead with an electric hand mixer’s dough hooks until smooth. Cover and let rise in a warm place for about 45 minutes.

Meanwhile melt butter for the streusel. Mix with flour and sugar to form crumbs, then cover and chill.

Wash and halve the fruit. Pit the plums; remove core from pears. Slice fruits into thin strips and drizzle pears with lemon juice.

Beat egg yolks with sugar until fluffy; fold in sour cream and coconut flakes.

Knead the yeast dough on a lightly floured surface and roll out onto the greased baking sheet. Spread coconut mixture over it. Arrange plums and pears decoratively in roughly 10 cm squares. Sprinkle streusel into the gaps. Bake in a preheated oven at 180°C (middle rack) for about 35–40 minutes.
