Fruit Bread with Apples

Ingredients
- 700 g sour Boskop apples
- 200 g cane sugar
- 125 g chopped hazelnuts
- 100 g Dried Apricots
- 100 g plums
- 100 g raisins
- 150 g butter
- 3 egg yolks
- 250 g whole wheat flour
- 250 g rye flour
- 1.5 sachets baking powder
- 2 tbsp cocoa powder
- 2 tsp Cinnamon
- 1 tsp ground clove
- 2 tbsp rum
- 3 tsp grated lemon zest
- butter (for the pan)
- flour (to dust)
- powdered sugar (for dusting)
Instructions

Quarter apples, peel, remove cores, then grate coarsely and mix with sugar. Cover and let sit overnight.

Cut apricots and plums into small cubes, mix with raisins and nuts, add to the apple mixture. Beat butter and egg yolks until fluffy.

Combine both flours with baking powder, cocoa, cinnamon, and cloves. Gradually fold in lemon juice and grated zest, then incorporate the apple mixture and dry ingredients into the batter.

Grease a loaf pan and dust with flour. Pour batter into pan, smooth top, and bake in preheated oven at 200°C (middle rack) for about 1 hour.

Let the finished apple fruit bread cool in the pan for ~10 minutes, then remove from pan and cool on a wire rack. Dust with powdered sugar before serving and slice.
