Dried Fruit Cake

Ingredients
- 80 g dried plums
- 50 g Raisins
- 100 ml rum
- 250 g butter
- 250 g sugar
- 4 eggs
- Salt
- 400 g flour
- 1 packet baking powder
- 180 ml milk
- 40 g chopped candied orange peel
- 40 g chopped candied lemon peel
- 1 tbsp Lemon Juice
- flour (for dusting)
- butter (for the pan)
- breadcrumbs (for the pan)
Instructions

Cut the dried plums into small pieces and soak them with the raisins in rum.

Preheat the oven to 180°C (350°F) fan or conventional heat.

Cream the butter with sugar, then gradually fold in the eggs with a pinch of salt.

Sift together flour and baking powder, then alternately stir into the butter mixture with milk.

Drain the dried fruit well, dust the candied orange and lemon peel with flour, and mix them into the batter with the lemon juice.

Pour the batter into a greased loaf tin lined with breadcrumbs, spread evenly, and bake in the preheated oven for 50–60 minutes; test with a skewer.

Cover the top of the cake with buttered parchment paper early to prevent excessive browning.

Remove the finished cake from the oven, let it cool, carefully unmould, and allow to chill. Slice and serve.
