Fried Tofu with Vegetables

Ingredients
- 3 ripe tomatoes
- 2 yellow bell peppers
- 75 g fresh soy sprouts
- 10 g ginger (1 piece)
- 1 stalk lemongrass
- 5 carrots
- 2 tbsp sesame oil
- 400 g Tofu
- Salt
- Pepper
Instructions

Wash the tomatoes, remove stems, score the underside crosswise. Blanch with hot water, shock in cold water and peel. Remove seeds, dice the flesh into small cubes.

Wash the bell peppers, quarter them, remove seeds and white membranes, slice into strips.

Rinse and drain the sprouts. Peel the ginger and grate finely.

Wash lemongrass thoroughly, dry, cut off the thick white end into small pieces.

Peel the carrots and slice into thin strips.

Heat oil in a pan. Fry tofu for 2–3 minutes until crisp, remove and keep warm.

Add vegetables with ginger and lemongrass to the pan and steam for 5–8 minutes. Season with salt and pepper.

Slice tofu and arrange on a plate with the vegetables. Serve fried tofu with vegetables.
