Ingredients

  • 250 g green asparagus
  • 1 walnut-sized piece ginger
  • 2 Garlic cloves
  • coriander
  • 4 tbsp oil
  • 4 tbsp pineapple juice
  • 100 ml Vegetable broth
  • 160 g Thai rice
  • Salt
  • Cayenne pepper
  • 4 Sharon fruits
  • juice of one lime

Instructions

    Peel the lower third of the asparagus spears, trim ends generously. Rinse asparagus. Peel carrots and cut into fine strips. Peel ginger and garlic and finely chop. Wash coriander, shake dry, leaving a few leaves, then chop.

    Heat 2 tbsp oil in a pan. Sauté asparagus, carrots, ginger, and garlic for several minutes. Add pineapple juice and broth, steam everything for about 5 minutes.

    Cook rice according to instructions in salted water. Season vegetables with salt and cayenne pepper, mix with coriander into the rice, keep warm.

    Rinse Sharon fruits and slice. Heat remaining oil in a pan and fry each slice of Sharon for 1-2 minutes per side, drizzling lime juice. Arrange Sharon slices on the rice and serve garnished with coriander.
