Fried Sage Leaves

A fresh recipe featuring fried sage leaves made with simple ingredients.

Ingredients

  • 2 handfuls sage
  • 1 egg
  • 125 g flour
  • 150 ml dry white wine
  • 1 pinch salt
  • vegetable oil (for frying)

Instructions

    Rinse the sage, pat dry and remove the leaves.

    Separate the egg. Whisk together the flour, yolk, wine, and salt until smooth. Let rest for about 10 minutes.

    Beat the egg whites to stiff peaks and fold into the batter.

  4. 4.

    Using tweezers, dip each sage leaf in the batter and fry in hot oil (about 170°C) in a tall pan for roughly 1 minute until golden brown.

    Drain on paper towels and serve as a snack or appetizer.
