Fried Potatoes with Sunny Side Up Eggs and Green Salad

Crispy fried potatoes topped with sunny side up eggs, served alongside a fresh green salad – a classic breakfast dish from Spoonsparrow!
Ingredients
- 800 g boiled potatoes
- 3 shallots
- Salt
- Pepper (freshly ground)
- 8 slices of bacon (diced)
- 3 tbsp sunflower oil
- 1 tbsp butter
- 4 eggs
- 2 tbsp chopped parsley

Peel the potatoes and slice them thinly. Peel and finely chop the shallots.

Heat the oil in a skillet over medium heat and fry the potato slices until golden brown. Flip them, then add the bacon cubes and shallot pieces, cooking together. Season with salt and pepper, and transfer to preheated plates.

In the same skillet, melt the butter until foamy, pour in two beaten eggs, and cook until set. Place the fried potatoes on a plate, top with the cooked eggs, sprinkle with parsley, and serve immediately. Pair with a side salad of your choice.
