Fried Potatoes with Fried Egg

Ingredients

  • 800 g potatoes
  • 2 red bell peppers
  • 3 shallots
  • 2 tbsp finely chopped parsley
  • Salt
  • Pepper (freshly ground)
  • oil (for frying)
  • 8 Nürnberger roast sausages
  • 4 eggs

Instructions

    Peel the potatoes and cut them into small cubes. Peel the shallots and quarter them lengthwise. Wash the bell peppers, halve them, remove seeds, and dice them.

    Heat 3 tbsp oil in a large skillet over medium heat and fry the potatoes, stirring frequently. After about 3 minutes add the pepper and shallots and continue cooking until the potatoes are tender. Meanwhile cut the sausages into 2 cm pieces and fry them for 4–5 minutes before the end of the potato cooking. Season with salt and pepper and stir in the parsley.

    In a second skillet, fry four sunny‑side eggs in a little oil, seasoning with salt and pepper. Arrange the fried egg on top of the sausage‑potato mixture and serve immediately.
