Sweet Quark Pancakes with Apple Salad
The sweet quark pancakes with apple salad contain many vitamins and building protein but little fat.
Ingredients
- 200 g small apples (2 small apples)
- 0.5 Organic lemon
- 1 tbsp Raisins
- 2 tsp Honey
- 1 egg
- 1 tbsp cane sugar
- a pinch salt
- 150 g Low-Fat Quark
- 30 g whole-grain semolina (3 tbsp)
- 30 g fine rolled oats (4 tbsp)
- 3 tsp rapeseed oil
- 2 tsp powdered sugar
Instructions

Wash the apples, pat dry, quarter them, core and cut into very thin slices. Place in a bowl.

Rinse half a lemon hot, pat dry and grate the zest finely. Squeeze the lemon and mix the juice with the grated zest into the apple slices.

Fold in raisins and honey and stir well.

Beat the egg in a bowl. Add sugar and a pinch of salt and whisk until the sugar dissolves. Add quark, semolina and oats and mix into a batter.

Heat oil in a large pan. Dip a tablespoon into water and use it to scoop 8 portions from the batter.

Place them in the pan, press lightly flat and fry on medium heat for about 4 minutes until golden brown, then flip and cook for another 2 minutes. Sprinkle powdered sugar over the pancakes with a tea strainer. Serve the quark pancakes with the apple salad.
