Ingredients

  • 2 tbsp plant oil
  • 4 slices bacon
  • 4 English sausages (or mini pork sausages)
  • 400 g baked beans (canned)
  • 4 slices toast bread
  • 4 eggs
  • Salt

Instructions

    Preheat the oven to 80°C fan for warm serving.

    Add 1 tbsp oil to a hot pan and fry the bacon until golden brown and crispy on both sides; keep warm in the oven. Fry the sausages in the same pan, turning slowly for about 10 minutes until nicely browned.

    Meanwhile, heat the beans in a small pot over medium heat, stirring occasionally until boiling, then let simmer for a few minutes.

    When the sausages are browned and cooked through, place them in the oven to keep warm.

    Toast the bread slices until golden brown, then cut each slice diagonally once. Butter if desired.

    In the remaining oil, fry the eggs into sunny‑side‑up omelets, seasoning lightly with salt.
