Fried Potato Patties

Ingredients
- 1 kg potatoes (starchy)
- Salt
- 2 tbsp butter
- 3 egg yolks (from large eggs)
- 0.5 tbsp flour
- 0.5 tbsp pepper
- freshly grated nutmeg
- 1 l peanut oil (for frying)

Peel, wash and cut the potatoes into pieces. Then boil in salted water for about 20 minutes until tender. Drain and let steam off a bit.

While still warm press the potatoes through a potato masher and immediately knead with butter, egg yolks, flour, salt, pepper, and nutmeg. The dough must hold together well; if it is too wet or dry, add more egg yolk or flour.

Shape round patties from the mixture and optionally imprint a smiley face. Heat oil to 170°C or until bubbles appear on a wooden spoon handle dipped into fat. Fry the croquettes in batches for 3–4 minutes depending on size.
