Fried Fish Balls

Ingredients

  • 1 roll of bread
  • 800 g small sardines (12 small sardines), or alternatively mackerel fillets
  • 0.5 bunch Parsley
  • 0.5 bunch coriander leaves
  • 6 cloves garlic
  • 1 lemon
  • 1 tsp cumin
  • 1 tsp allspice powder
  • 1 egg
  • olive oil

Instructions

    Soak the bread in warm water. Rinse the sardines and use your fingers to rub off the scales. Remove the head and middle spine from each fish, or have them pre‑prepared by a fishmonger.

    Wash and dry parsley and coriander, then finely chop. Peel and finely chop garlic. Squeeze the lemon. Crush the garlic with cumin and allspice in a mortar. Mix parsley, coriander, lemon juice and 6 tbsp olive oil together.

    Puree the sardines in a blender until smooth. Squeeze out excess liquid from the bread. Add the herb‑spice mixture and egg to the blender and pulse again briefly.

    Let the mixture rest for about 30 minutes. Using two teaspoons, form small balls from the dough.

    Heat plenty of olive oil in a pot over high heat. Fry the fish balls for about 10 minutes until golden brown. Drain on paper towels and serve hot.
