- 200 g Flour
- 0.5 tsp Salt
- 1 tsp dried thyme
- 250 ml dry white wine
- 2 Eggs
- 600 g halloumi
- 3 tbsp flour (for coating)
- vegetable oil (for frying)
- Basil
- caraway
Instructions

Whisk the flour, salt, thyme and wine together in a bowl to form a smooth batter. Add the eggs and stir well until the mixture is thick and pours like a thickened whisk.

Slice the cheese, coat each slice with flour, dip into the batter, and fry in hot oil (about 170°C) for 2-3 minutes per side until golden brown.

Drain on kitchen paper, garnish with basil and caraway, and serve with focaccia and olives if desired.
