Ingredients

  • 400 g quark
  • 1.5 EL lemon juice
  • 2 EL whipping cream
  • 2 EL olive oil
  • 5 EL green olives (pitted)
  • 1 TL grated untreated lemon zest
  • Salt
  • Pepper (freshly ground)
  • 800 g mixed vegetables (e.g., kohlrabi, carrots, red and yellow bell peppers, fennel, celery)
  • 1 spring onion (blanched)

Instructions

    Whisk the quark with lemon juice, cream, and olive oil until smooth. Finely chop the olives and mix them with the zest into the quark cream; season with salt and pepper.

    Wash or peel and clean the vegetables. Cut them into thin strips about 10 cm long. Bundle these with blanched spring onion greens as desired, serve on a platter with the dip.
