Ingredients

  • 4 starchy potatoes (≈150 g each)
  • 500 g pumpkin flesh (peeled)
  • 50 ml white wine vinegar
  • 100 ml dry white wine
  • 2 tbsp honey
  • 4 slices oven cheese (≈100 g)
  • 2 tbsp freshly chopped parsley
  • Salt
  • Chives
  • pink peppercorns

Instructions

    Wash the potatoes thoroughly and steam them for about 30 minutes. Dice the pumpkin. Bring the white wine vinegar, white wine, approximately 50 ml water, and honey to a boil, then add the pumpkin cubes. Simmer gently for about 15 minutes, then set aside to rest.

    Preheat the oven to 220 °C (425 °F) with fan or upper heat. Place baking stones in the oven. Slice the cheese into thick rounds. Arrange the steamed potatoes on the hot stones, top with the cheese slices, and bake for 8–10 minutes until the cheese melts.

    Add parsley to the pumpkin, season with salt. Remove the potatoes from the oven, garnish with chives and pink peppercorns, and place a pumpkin cube beside each potato. Serve any remaining pumpkin cubes separately.
